Winter Salad

Who said you can only eat sallad in the summer? This sallad is filled with iron, omegas, proteins and vitamins so you can fight all the winter germs out there. Enjoy

(4 serves)

200g brussels sprouts
100g raw unsalted hazelnuts 2 oranges
1 pomegranate
2 tbsp hemp seeds

Dressing:
3 tbsp olive oil or nut oil
2 tbsp fresh lemon or orange juice 1 tbsp raw honey
A handful fresh basil leaves
Sea Salt & black pepper

Cut the brussel sprouts in halves and peel and chop the oranges into small pieces. Two options to prepare the brussel sprouts: you can boil or wok them.
Roast the hazelnuts in a pan (make sure that you do this in low heat).
To prepare the pomegranate: Cut them in halves.

Fill a bowl with cold water and submerge the pomegranate.
Separate the seeds from the rind with your fingers. Use a colander to get the seeds.
To prepare the dressing: chop the basil leaves (set aside) and whisk all the ingredients in a small bowl.

Place the brussel sprouts, roasted hazelnuts,pomegranate seeds,orange slices and hemp seeds in a bowl or big plate. Add the dressing and herbs on the top and mix with the salad with spoon.
