This is everybody’s favourite on our dinner serving. Stay warm and healthy!
3-4 peeled sweet potatoes (yams)
1tsp turmeric
1 green chilli
1/2 cumin seeds
2 pinches salt (ad if needed)
2 cloves of garlic
2 x 3 inches fresh ginger
3 cups coconut milk
Peel sweet potato and cut it into pieces. Add turmeric, chilli, cumin seeds, chopped garlic and chopped ginger. Cover the potatoes with water, add salt and boil until they are soft. Pour in the coconut milk and when it starts to boil again remove it from the stow. Mix the soup until smooth and decorate with a few pinches of fresh cilantro.
