Oat & Apricot Bars

Can tasty snacks be healthy? YES! Try this great oat och apricot bar recipe.

3 cups oats

1 cup dried apricots

½ cup dried mulberries

1 cup raw walnuts (chopped)

1 cup coconut flakes

2-3 ripe bananas

1 orange juice

4 tbsp coconut oil

3 tbsp flax seeds

3 tbsp maple syrup

A pinch sea or Himalaya salt

Preheat the oven to 250°C.

Place in a large bowl the oats, dried fruits, nuts, flax seeds,coconut flakes and salt.

By using a blender mix the bananas, orange juice, maple syrup and coconut oil until smooth.

Combine the oats with the banana mix.

Cover an oven pan with some coconut oil, and then fill it with the oat-banana mixture.

Press the mixture firmly until you get a uniform surface. Bake for about 15-20 minutes in 200°C. Let it cool and cut into small bars.

You can eat your bars with some fresh plant milk or yogurt.
